Pot Roast (beef) Cooking Times?

I am cooking a 3lb pot roast, I want to cook it for several hours over low heat 225 degrees, does anyone know how many hours to cook this at, or if I should increase the cooking temp. and reduce the cooking time, Also I have it covered in foil and sitting on a rack of veggies. Should I also be basting this roast, or just letting it slow cook in the oven and rest??
The outside of my roast was seasoned and braised, for 4 minutes on each side over high-heat

  1. for a 3lb roast it needs to cook for 5 to 6 hours at 225…Also I put my veggies on top so they don’t get mushy.. with onions and celery on top the juices from them, sink into the roast making it more juicy and tender.

  3. you will need some liquid in the roast pan. and it will probably take about 4 hours. I usually don’t baste my roast but you certainly can if you like. just remember that the more you open your oven, the longer it will take to cook your food, because all the heat will escape each time you open it.

  4. I would cook it in a slow cooker for 6-7 hrs on low with your vegetables left whole and placed round it. This way if you are not home it does not matter dinner ready to serve after resting the roast.
